So after watching a dozen videos on fried chicken techniques on a Friday night I noticed that each video had one or two great ideas but none had them all. Little details like the squeezing techniques and drying the chicken are huge!
Then I spent all Saturday attempting the KFC leaked recipe on some costco chicken as well as some local grocery store pieces.
Were there things I could have done better? Yes, but still it turned out tasting exactly the same. Family obviously said it was better. But yes, perhaps 120 seconds less in the fryer, and leave the chicken in the butternilk overnight instead of 4 hours. Also, I've heard that double frying will make it better but that's a whole change of procedure (yes I'm a coder, so everything is a procedure!).
